Cherry Cobbler Muffins

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar (plus 1 tablespoon for topping)
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup whole milk (or plant-based alternative)
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
Filling
  • 1.5 cups fresh or canned cherries, pitted and halved
Optional Toppings
  • to taste powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to ensure all ingredients are well-mixed and aerated.
  3. In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix this wet mixture thoroughly before gradually adding it to the dry mixture. Stir until just combined.
  4. Gently fold in the halved cherries into the batter.
Baking
  1. Spoon the batter into the muffin tins, filling each cup about two-thirds full. Sprinkle the tops with the remaining tablespoon of sugar.
  2. Bake for about 18 to 20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are lightly golden.
Cooling
  1. Allow muffins to cool slightly in the tin before transferring them to a wire rack.
