Ingredients
  

For the Pie Crust
  • 2.5 cups all-purpose flour Use chilled flour for better texture.
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup unsalted butter, chilled and cubed Cold butter is key for flaky crust.
  • 6-8 tbsp ice water Add slowly to avoid over-working the dough.
For the Filling
  • 6-8 medium apples (Granny Smith and Honeycrisp recommended) Peel, core, and slice into thin wedges.
  • 0.75 cups granulated sugar
  • 2 tbsp all-purpose flour Helps thicken the filling.
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg Adds a special flavor.
  • 1 tbsp lemon juice Enhances the apple's natural flavor.
  • 1 tbsp butter (to dot on filling) Adds richness.

Method
 

Making the Pie Crust
  1. In a large bowl, mix together the flour, salt, and sugar.
  2. Add the chilled cubes of butter and blend until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, mixing just until the dough comes together.
  4. Divide the dough in half, shape into disks, wrap in plastic wrap, and chill in the fridge for at least 1 hour.
Preparing the Filling
  1. Peel, core, and slice the apples into thin wedges.
  2. Toss the apple slices in a large bowl with sugar, flour, cinnamon, nutmeg, and lemon juice.
  3. Let the mixture sit for about 10 minutes.
Assembling the Pie
  1. Preheat the oven to 425°F (220°C).
  2. Roll out one disk of dough on a floured surface to fit your pie plate.
  3. Place the crust in the pie plate, then fill it with the apple mixture and dot with butter.
  4. Roll out the second disk of dough and cover the filled pie, sealing the edges.
  5. Cut slits in the top for steam vents and sprinkle sugar on top.
Baking
  1. Bake the pie for 45-50 minutes or until bubbly and golden-brown.
  2. Let it cool for at least 2 hours before slicing.
