Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter and granulated sugar until fluffy, about 4-5 minutes.
- Gradually mix in the flour and salt until just combined, followed by the vanilla extract.
- Press about two-thirds of the dough into the bottom of a greased 9x13-inch baking pan to form an even layer.
Apple Filling
- In a separate bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.
- Spread the apple filling over the crust evenly.
Topping and Baking
- Crumble the remaining dough over the top of the apple filling.
- Bake for 30-35 minutes, until the topping is set and lightly golden and the apples are bubbling.
- Allow the bars to cool completely before cutting into squares, ideally letting them cool for at least an hour.

Notes
Serve warm with vanilla ice cream or whipped cream. For a festive twist, add dried cranberries or toasted pecans. Vegan options: substitute butter with coconut oil and use a flaxseed egg.
