Ingredients
  

For the cookie base
  • 1 cup unsalted butter, softened Ensure it's at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
For the apple filling
  • 2 cups apples, peeled and diced Granny Smith works great!
  • 1 tablespoon lemon juice
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
For the cheesecake center
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until smooth and fluffy, about 3-5 minutes.
  3. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Toss the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg in a separate bowl, ensuring each piece is coated evenly.
  6. Beat the softened cream cheese with powdered sugar and vanilla until nice and smooth.
Assembly
  1. Take a tablespoon of the cookie dough and flatten it in your palm.
  2. Place a spoonful of the cheesecake mixture in the center, followed by a few pieces of the apple mixture.
  3. Grab another tablespoon of cookie dough, flatten it, and place it on top to seal in all that filling.
  4. Roll gently into balls and place them on a parchment-lined baking sheet.
Baking
  1. Bake the cookies for 12-15 minutes or until they’re golden brown.
  2. Let them cool completely before serving.
