  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
For the cheesecake filling
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup apricot jam Warmed slightly for easier swirling

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan.
Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
  2. Add in the sugar and vanilla extract, mixing until completely combined.
  3. Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Stir in the sour cream until smooth.
Swirling and Baking
  1. Warm the apricot jam slightly in the microwave to make it easier to swirl.
  2. Pour the cheesecake filling over the crust, then dollop the warmed apricot jam on top.
  3. Using a knife or skewer, gently swirl the jam into the cheesecake without overdoing it.
  4. Bake for about 50-60 minutes or until the edges are set and the center slightly jiggles.
  5. Turn off the oven and let the cheesecake cool inside for about an hour.
  6. Afterward, let it cool completely at room temperature, then refrigerate for at least four hours, preferably overnight.
