  • 1 can (14 oz) artichoke hearts, drained and rinsed or fresh artichokes if you're feeling adventurous!
  • 3 cups baby spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled or a vegan cheese for a dairy-free option
  • 1/4 cup olives (Kalamata or green) depending on your preference
  • to taste fresh parsley for garnish
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper to balance the dressing

Method
 

Preparation
  1. Start by grabbing a suitable mixing bowl. Toss in the baby spinach or mixed greens as the base.
  2. Gently squeeze and cut the artichoke hearts into quarters if you're using whole ones. Toss those into the bowl.
  3. Add the cherry tomatoes to the bowl for flavor and color.
  4. Sprinkle in the thinly sliced red onion to add tang.
  5. Incorporate the feta cheese and olives for extra flavor.
Dressing
  1. Whisk together the olive oil, lemon juice, Dijon mustard, and a pinch of salt and pepper.
  2. Drizzle this dressing over the salad and gently toss everything together.
Garnish and Serve
  1. Garnish with fresh parsley before serving.
