Ingredients
  

For the salmon rolls
  • 4 fillets salmon fillets, skinless and boneless
  • 1 cup ricotta cheese
  • 1 zest and juice of 1 lemon
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • 8-12 spears asparagus spears, trimmed
  • Olive oil, for drizzling
  • Optional: Parmigiano-Reggiano cheese for extra richness

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, chopped dill, and a pinch of salt and pepper. Stir until smoothly blended.
  3. Lay the salmon fillets on a clean surface and spread a layer of the ricotta mixture onto each fillet.
  4. Place 2-3 asparagus spears at one end of the salmon and roll them up gently but firmly.
  5. Secure the rolls with toothpicks if needed, and place seam-side down in a greased baking dish.
  6. Drizzle some olive oil over the top and sprinkle with salt, pepper, and Parmigiano-Reggiano if desired.
Cooking
  1. Bake the salmon rolls for 15-20 minutes until the salmon is opaque and flakes easily with a fork.
  2. Let them rest for a couple of minutes before serving.
