  • 1 pound fresh asparagus (or frozen)
  • 1 cup sour cream (or Greek yogurt for a healthier alternative)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup breadcrumbs (panko works wonderfully too)
Seasoning and Toppings
  • 1 tablespoon olive oil (for toasting the breadcrumbs)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped nuts (optional: like almonds or walnuts for extra crunch)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Wash and trim the tough ends of your asparagus. If using frozen asparagus, skip the thawing.
  3. In a large bowl, mix together the sour cream, half of the cheese, garlic powder, salt, and pepper until well combined.
  4. Fold in the asparagus until coated in the creamy mixture.
  5. In a separate bowl, combine the breadcrumbs with olive oil and a pinch of salt.
Assembly
  1. Pour the asparagus mixture into a greased baking dish and spread it out evenly.
  2. Sprinkle the remaining cheese on top, followed by the breadcrumb mixture.
Baking
  1. Bake for about 25-30 minutes or until the top is bubbling and golden brown.
  2. Let it cool for a few minutes before serving.
