Ingredients
  

Tart Base
  • 1 sheet sheet of puff pastry can be store-bought or homemade
Filling
  • 1 pound fresh asparagus trimmed and cut into 2-inch pieces
  • 1 cup Gruyere cheese shredded; can substitute with Swiss or vegan cheese
  • 3 large eggs
  • 1 cup heavy cream
  • to taste Salt and pepper
  • 1 Zest of 1 lemon for a fresh twist
  • Optional herbs (thyme or dill) for added flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a tart pan.
  3. Par-bake the pastry for about 10 minutes until golden.
  4. In a bowl, whisk together the eggs and cream, seasoning with salt, pepper, and lemon zest.
Assembly
  1. Remove the pastry from the oven and sprinkle half of the Gruyere cheese on the bottom.
  2. Arrange the asparagus pieces on top.
  3. Pour the egg mixture over the asparagus, then top with the remaining Gruyere cheese.
Baking
  1. Bake the tart for 30-35 minutes until set and golden on top.
