Ingredients
  

For the Pasta
  • 8 oz spaghetti or your favorite pasta Feel free to use any pasta shape you love!
  • 1 lb fresh asparagus, trimmed and cut into 2-inch pieces Ensure asparagus is tender but still crunchy
  • 3 tbsp olive oil For sautéing
  • 3 cloves garlic, minced Sauté until fragrant
  • 1 unit lemon, zested and juiced Adds brightness to the dish
  • to taste Salt and black pepper Adjust according to preference
  • optional Fresh Parmesan cheese, grated For topping, can be substituted with nutritional yeast for a vegan option
  • optional Red pepper flakes Add for a little kick

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to boil. Once bubbling, add spaghetti and cook according to package instructions until al dente.
Preparing the Asparagus
  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn it.
  3. Add asparagus pieces to the skillet, seasoning with salt and pepper, and sauté for about 4-5 minutes until tender but still vibrant and slightly crunchy.
Combining Ingredients
  1. Once pasta is done, reserve about ½ cup of the pasta cooking water, then drain the spaghetti.
  2. Add the drained spaghetti to the skillet with the asparagus.
  3. Sprinkle in the lemon zest and juice, and pour in enough reserved pasta water to combine everything.
  4. Toss gently until well-coated and let the pasta absorb the flavors.
Serving
  1. Serve warm, topped with grated Parmesan and a pinch of red pepper flakes if desired.
