  • 8 oz spaghetti or fettuccine pasta or gluten-free alternative
Vegetable Ingredients
  • 1 bunch fresh asparagus trimmed and cut into 1-inch pieces
  • 3 cloves garlic minced
  • 1 lemon zest and juice
Cooking Ingredients
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese use nutritional yeast for a vegan option
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a hint of heat)
  • Fresh parsley (for garnish; optional)

Method
 

Preparation
  1. Bring a pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente, reserving 1 cup of pasta cooking water.
Cooking
  1. Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add asparagus to the skillet and sauté for 3-4 minutes until bright green and tender but still crunchy.
  3. Drain the pasta and add it to the skillet with garlic and asparagus.
  4. Pour in lemon juice and zest, then toss everything together.
  5. Sprinkle in grated Parmesan and a splash of reserved pasta water to create a creamy coating.
  6. Add more pasta water if needed, and season with salt, pepper, and red pepper flakes.
  7. Serve warm, garnished with fresh parsley.
