Preparation
- Preheat your oven to 350°F (175°C).
- In a medium-sized mixing bowl, thoroughly mash the bananas.
- Add the rolled oats, milk, baking powder, cinnamon, salt, vanilla extract, and maple syrup (or honey) to the bowl. Stir until well combined.
- Adjust the consistency by adding a splash more milk if the mixture feels too thick.
Baking
- Pour the oat mixture into a greased baking dish (8x8 works perfectly) and spread it evenly.
- Add any optional toppings you desire.
- Bake in the preheated oven for about 25-30 minutes, until the top is golden brown and the edges seem set.
Serving
- Allow the Baked Banana Oatmeal to cool for a few minutes before slicing.
- Serve warm, optionally drizzling with almond butter or a dollop of yogurt.

Notes
Can be made vegan by using non-dairy milk and replacing honey with maple syrup. Store in an airtight container in the refrigerator for 4-5 days. Freezes well in individual portions.
