  • 4 pieces chicken thighs (bone-in, skin-on) for extra flavor and moisture
  • 1 cup long-grain white rice can substitute with brown or jasmine rice
  • 2 cups chicken broth homemade or store-bought
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika smoked or sweet, based on preference
  • 0.5 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas or mixed vegetables optional, adds a nice pop of color
  • Fresh parsley for garnish, optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet or baking dish, heat the olive oil over medium heat.
  3. Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 3-4 minutes.
  4. Stir in the paprika and dried thyme.
  5. Add the uncooked rice and toast slightly for about 1-2 minutes.
  6. Pour in the chicken broth and stir gently to ensure the rice is evenly distributed.
  7. Season the chicken thighs with salt and pepper, then place them skin side up on top of the rice.
Cooking
  1. Cover the dish tightly with aluminum foil and bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F.
  2. For crispy skin, remove the foil for the last 10 minutes of baking.
  3. After baking, add the frozen peas or mixed vegetables if using, and allow to heat through.
  4. Let the dish rest for a few minutes before serving.
