  • 1 cup cottage cheese low-fat or full-fat work
  • 4 large eggs large size for best results
  • 1/2 cup shredded cheese cheddar, mozzarella, or your favorite
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or chives)
  • Optional: diced veggies (spinach, bell peppers, or tomatoes)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the shredded cheese and the garlic and onion powders. Add salt and pepper to taste.
  4. If desired, fold in diced veggies such as spinach or bell peppers.
  5. Pour the mixture into a greased 8x8 inch baking dish and shake gently to spread evenly.
Cooking
  1. Bake in the preheated oven for 20-25 minutes until puffed up and golden.
  2. Let cool for a couple of minutes before slicing into squares.
  3. Garnish with fresh herbs before serving.
