  • 4 large large eggs Substitute with egg whites for a lighter version.
  • 4 pieces puff pastry Store-bought saves time; homemade is delightful.
  • 1 cup spinach Fresh or frozen, thawed and drained.
  • 1/2 cup cream cheese Or Greek yogurt for a tangy twist.
  • 1/2 cup grated cheese Sharp cheddar is recommended, but feel free to experiment.
  • Salt and pepper To taste.
  • Fresh herbs Like chives or parsley for topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out your puff pastry on a lightly floured surface to about 1/8 of an inch thick.
  3. Cut the pastry into squares, about 4 inches each, and place them on a lined baking sheet.
  4. Bake for about 15 minutes, or until puffed and golden brown.
  5. While the pastries bake, mix softened cream cheese with the spinach, salt, and pepper in a bowl.
Assembly
  1. Once the pastry is out of the oven, gently press down the center of each puff.
  2. Spoon the spinach mixture into each cup, then crack an egg on top.
  3. Sprinkle grated cheese over each egg.
Baking
  1. Pop the assembled pastries back into the oven and bake for an additional 15 to 20 minutes, or until egg whites are set.
