Ingredients
  

Pasta and Cheese
  • 8 oz 8 oz. pasta (penne or fusilli recommended)
  • 1 block (8 oz.) 1 block (8 oz.) feta cheese
Vegetables and Seasonings
  • 2 cups 2 cups cherry tomatoes
  • 3 cloves 3 cloves garlic, minced
  • 1/4 cup 1/4 cup olive oil
  • 1 tsp 1 tsp dried oregano
  • Salt and pepper to taste
Garnishes
  • Fresh basil or parsley (optional, for garnish)
  • Red pepper flakes (optional, for a little heat)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, feta cheese, minced garlic, olive oil, dried oregano, salt, and pepper. Stir gently to coat.
Baking
  1. Bake in the oven for about 30 minutes, until tomatoes are soft and feta is creamy.
  2. While baking, boil salted water and cook pasta according to package instructions until al dente (about 8-10 minutes). Reserve some pasta water and drain the rest.
Combining
  1. After removing the dish from the oven, stir the feta and tomatoes to create a sauce. If too thick, add a splash of reserved pasta water.
  2. Mix in the cooked pasta until evenly coated. Optionally, garnish with fresh herbs and red pepper flakes.
