Ingredients

Main ingredients
  • 1 loaf loaf of brioche bread (about 12-16 slices; challah works too)
  • 6 large eggs
  • 2 cups whole milk (or any milk of choice)
  • 1 cup heavy cream (for richness; can substitute half-and-half)
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Optional toppings
  • maple syrup for serving
  • powdered sugar for serving
  • fresh berries for serving
  • whipped cream for serving

Method

Preparation
  1. Begin by slicing your brioche bread into thick chunks, about one to two inches thick.
  2. Whisk together the eggs, milk, heavy cream, sugar, vanilla, cinnamon, nutmeg, and salt in a large mixing bowl until well combined.
  3. Gently fold the bread chunks into the egg mixture, ensuring every piece is well-coated.
  4. Transfer the mixture into a greased baking dish, pressing down lightly on the bread.
  5. Cover the baking dish with plastic wrap and let it sit in the refrigerator overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Bake the casserole uncovered for about 45-50 minutes until it’s puffed and golden brown on top.
  3. If the top begins to brown too much, cover it loosely with foil.
  4. Let the casserole rest for about 10 minutes before serving.

Notes

For a fruitier twist, add chopped apples, berries, or bananas into the bread layer. Nutty goodness can be achieved by mixing in pecans or walnuts. Consider a vegan option by using almond or oat milk, flax eggs, and plant-based cream. You can also spice it up with cardamom or pumpkin spice or add chocolate chips for a decadent treat.
