Preparation
- In a bowl, mix together the harissa paste, olive oil, lemon zest and juice, minced garlic, cumin, and a sprinkle of salt and pepper.
- If using chicken thighs, place them skin-side up in a baking dish and pour the marinade over, ensuring each piece is well coated.
- Let the chicken marinate for at least 30 minutes, or for quicker results, a minimum of 10 minutes.
Cooking
- Preheat your oven to 425°F (220°C).
- Bake the chicken for 30-35 minutes or until the skin is golden and crispy, and the juices run clear when pierced, with an internal temperature of 165°F (74°C).
- Optionally, toss seasonal veggies like bell peppers or zucchini around the chicken during baking for a colorful side.
Serving
- Serve the Baked Harissa Chicken with couscous or roasted sweet potatoes, and a fresh salad to complement the meal.

Notes
For extra spice, add crushed red pepper flakes to the marinade. For a vegan option, replace the chicken with marinated chickpeas and bake until crispy.
