  • 4 fillets salmon fillets (about 6 oz each) Feel free to substitute with another fish or plant-based option.
  • 2 pieces ripe avocados Choose ripe avocados for creaminess.
  • 1 juice lime Freshly juiced for best flavor.
  • to taste Salt and pepper Adjust to your preference.
  • as needed tablespoons Olive oil Used for greasing and drizzling.
  • to taste Fresh cilantro (optional) For garnish.
  • to taste Red pepper flakes (optional) Add for a spicy kick.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Season the salmon fillets generously with salt and pepper on both sides.
  3. Place the salmon skin-side down in the dish, drizzling a little olive oil over the top.
Baking the Salmon
  1. Bake the salmon for about 15-20 minutes, or until it flakes easily with a fork and has a flaky pink color throughout.
Preparing Avocado Mash
  1. While the salmon bakes, scoop out the flesh of the avocados into a bowl.
  2. Add lime juice, salt, and pepper to taste, and mash until smooth yet still a bit chunky.
  3. If desired, sprinkle in some red pepper flakes for heat.
Serving
  1. Once the salmon is cooked, top each fillet with a generous scoop of the avocado mash.
  2. Garnish with fresh cilantro if desired.
