  • 1 large egg For vegan option, substitute with flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water).
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour (or whole wheat flour) For a heartier texture, use whole wheat flour.
Optional Add-ins
  • 1/2 cup chocolate chips or nuts Optional for added texture and flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, blend together the mashed bananas and melted butter until well combined.
  3. Add the sugar, egg, and vanilla extract into the banana mixture. Whisk until smooth and creamy.
  4. Sprinkle in the baking powder, baking soda, cinnamon, and salt. Gently fold in the flour until just combined.
  5. Optionally stir in chocolate chips or nuts.
  6. Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick.
  7. Cut into wedges or use a biscuit cutter for different shapes.
  8. Place them on your prepared baking sheet and brush the tops with a little milk.
Baking
  1. Bake for 15-20 minutes, or until the edges turn golden brown and a toothpick inserted comes out clean.
  2. Let them cool slightly on a wire rack.
