  • 1.5 cups crushed graham crackers (or digestive biscuits)
  • 0.33 cup unsalted butter, melted
  • 2 tablespoons sugar
For the filling
  • 2 pieces ripe bananas, sliced
  • 1 cup heavy cream for mixing with the filling
  • 0.5 cup sweetened condensed milk
  • 0.25 cup whiskey (bourbon works beautifully)
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon cornstarch
For the topping
  • 1 cup heavy cream for whipping
  • 2 tablespoons powdered sugar
  • 2 tablespoons whiskey caramel sauce (store-bought or homemade)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers with melted butter and sugar until they resemble wet sand.
  3. Press the mixture into the bottom and sides of a pie dish.
  4. Bake the crust for about 8-10 minutes until golden, then allow it to cool.
Filling
  1. In another bowl, mix heavy cream, sweetened condensed milk, whiskey, vanilla extract, and cornstarch. Whisk until well combined.
  2. Gently fold in the sliced bananas.
  3. Pour the filling into the cooled crust.
Chilling and Topping
  1. Chill the pie in the refrigerator for at least 2 hours.
  2. Before serving, whip the cream with powdered sugar until soft peaks form.
  3. Spread the whipped cream over the top of the pie and drizzle with whiskey caramel sauce.
