  • 1 lb boneless, skinless chicken breasts
  • ½ cup all-purpose flour (or gluten-free flour for a gluten-free version)
  • 1 cup panko breadcrumbs
  • 2 whole eggs

For the Bang Bang Sauce
  • ½ cup mayonnaise (use vegan mayo for a plant-based version)
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha adjust according to your spice tolerance
  • 1 teaspoon lime juice
  • to taste sliced green onions and sesame seeds (for garnish) optional

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces.
  2. Set up a breading station: whisk together flour with salt and pepper in one bowl, beat eggs in another, and place panko breadcrumbs in a third bowl.
Breading
  1. Dip each piece of chicken in the flour mixture, shaking off excess, immerse in the egg, and coat with panko breadcrumbs.
  2. Ensure each piece is thoroughly coated.
Cooking
  1. Heat a couple of tablespoons of oil in a frying pan over medium heat.
  2. Cook chicken pieces until golden brown and cooked through, about 3-4 minutes per side. Do this in batches to avoid overcrowding.
Making the Sauce
  1. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and lime juice.
Assembly
  1. Thread the cooked chicken onto skewers and drizzle with Bang Bang sauce.
  2. Optional: Sprinkle with green onions and sesame seeds.
