Ingredients
  

For the Salmon
  • 4 fillets salmon fillets (wild-caught if possible)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For drizzling on salmon
For the Bang Bang Sauce
  • 1/2 cup mayo (try vegan mayo for a twist)
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon Sriracha Adjust to your heat preference
  • 1 teaspoon lemon juice
For the Bowls
  • 4 cups cooked rice (jasmine or brown)
  • 2 cups mixed greens (spinach, arugula, or kale)
  • 1 cup shredded carrots
  • 1 whole avocado, sliced
  • 1/2 cup chopped green onions
  • Sesame seeds for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the salmon fillets with salt and pepper on both sides and drizzle with olive oil.
  3. Place the seasoned fillets on a baking sheet lined with parchment paper.
Cooking
  1. Bake the salmon in the oven for 12-15 minutes or until it flakes easily with a fork.
  2. While the salmon is baking, prepare the Bang Bang sauce by mixing together mayonnaise, sweet chili sauce, Sriracha, and lemon juice in a small bowl. Adjust according to your heat preference.
  3. Cook the rice if you haven’t done so already.
Assembly
  1. Start with a base of rice in each bowl.
  2. Layer on the mixed greens and shredded carrots.
  3. Place the cooked salmon on top of the salad.
  4. Drizzle with the Bang Bang sauce, add avocado slices, and sprinkle with green onions and sesame seeds.
  5. Serve with lime wedges on the side.

Notes
