Preparation
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper on both sides and drizzle with olive oil.
- Place the seasoned fillets on a baking sheet lined with parchment paper.
Cooking
- Bake the salmon in the oven for 12-15 minutes or until it flakes easily with a fork.
- While the salmon is baking, prepare the Bang Bang sauce by mixing together mayonnaise, sweet chili sauce, Sriracha, and lemon juice in a small bowl. Adjust according to your heat preference.
- Cook the rice if you haven’t done so already.
Assembly
- Start with a base of rice in each bowl.
- Layer on the mixed greens and shredded carrots.
- Place the cooked salmon on top of the salad.
- Drizzle with the Bang Bang sauce, add avocado slices, and sprinkle with green onions and sesame seeds.
- Serve with lime wedges on the side.
