Ingredients
  

Pasta and Chicken
  • 2 cups cooked pasta (rotini or penne) Use your pasta of choice
  • 2 cups cooked chicken, shredded Grilled or rotisserie chicken works well
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, fresh or frozen
  • 1 medium bell pepper, diced Any color bell pepper
  • 1/2 cup red onion, finely chopped
Dressings
  • 1/2 cup BBQ sauce Use your favorite brand
  • 1/4 cup ranch dressing Greek yogurt can be substituted for a lighter option
Seasoning and Garnish
  • Salt and pepper, to taste
  • Fresh cilantro or parsley (optional, for garnish)

Method
 

Preparation
  1. Cook your pasta according to package instructions and drain it.
  2. Shred your chicken if you haven’t done so yet.
  3. Dice the bell pepper, chop the red onion, and halve the cherry tomatoes.
Mixing Ingredients
  1. In a large bowl, combine cooked pasta, shredded chicken, corn, diced bell pepper, cherry tomatoes, and red onion. Toss gently to mix.
Dressing the Salad
  1. Drizzle in BBQ sauce and ranch dressing, and season with salt and pepper. Toss until well coated.
  2. Taste and adjust seasoning as needed.
Chilling Time
  1. For best flavor, allow the salad to chill in the fridge for about 30 minutes before serving.
