Ingredients

  • 2 Grilled Chicken Breast, sliced (or use leftover BBQ chicken) Juicy and tender
  • 4 slices Bacon, cooked and crumbled Adds a nice smokiness
  • 2 Hard-Boiled Eggs, sliced Cook in boiling water for 9-12 minutes
  • 1 Avocado, diced Adds creaminess
  • 1 cup Cherry Tomatoes, halved Use grape tomatoes if preferred
  • 1 Cucumber, diced Fresh crunch
  • 1 head Romaine Lettuce, chopped Can substitute with mixed greens
  • 1 cup Shredded Cheddar Cheese For a cheesy topping
  • 1/2 cup BBQ Sauce Homemade or store-bought
  • 2 tablespoons Olive Oil For dressing
  • 1 tablespoon Lemon Juice Add freshness
  • Salt and Pepper To taste

Method
 

Preparation
  1. Grill the chicken breast until cooked with nice grill marks. Let rest for a few minutes before slicing.
  2. Cook the bacon until crispy, crumble it, and set aside.
  3. Prepare the hard-boiled eggs by boiling them for 9-12 minutes, cooling them in cold water, peeling, and slicing.
Assembly
  1. In a large bowl, combine chopped romaine, diced cucumber, and halved cherry tomatoes. Toss in the grilled chicken and bacon.
  2. Add sliced hard-boiled eggs and diced avocado.
  3. Whisk together BBQ sauce, olive oil, and lemon juice in a small bowl, and pour over the salad.
  4. Sprinkle with shredded cheddar cheese and season with salt and pepper to taste. Toss gently.

Notes

For a vegetarian option, substitute chicken and bacon with grilled tofu or tempeh, and add roasted chickpeas for protein. Add jalapeños for heat or corn/black beans for added flavor and texture. Store the dressing separately to keep the salad fresh, and best enjoyed fresh.
