Ingredients
  

For the salmon
  • 4 pieces salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
For the mango avocado salsa
  • 2 ripe mangoes, diced
  • 1 avocado, diced
  • 1 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional for heat)
  • Juice of 2 limes Juice of 2 limes
  • Fresh cilantro, chopped (for garnish)

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season them generously with salt and pepper.
Grilling the Salmon
  1. Place the salmon skin-side down directly onto the grates. Grill for about 5-7 minutes.
  2. Flip the salmon carefully and cook for an additional 3-5 minutes.
Preparing the Salsa
  1. In a medium-sized bowl, combine the diced mango, avocado, chopped red onion, and minced jalapeño (if using).
  2. Squeeze in the juice of the limes and gently toss everything together.
Serving
  1. Remove the salmon from the grill and let it rest for a couple of minutes.
  2. Place a generous scoop of the mango avocado salsa over each salmon fillet.
  3. Garnish with fresh cilantro.
