Ingredients

Main Ingredients
  • 1 pound ground beef
  • 4 cups chopped green cabbage Substitutable with Napa cabbage or kale
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced or grated
  • 3 tablespoons soy sauce Low-sodium is great
  • 1 tablespoon sesame oil Can use any cooking oil
  • Salt and pepper to taste
  • Optional: sliced carrots, bell peppers, or other favorite veggies
Garnish
  • Optional: sesame seeds and green onions for garnish

Method

Cooking
  1. Heat sesame oil in a large skillet over medium-high heat until it shimmers.
  2. Add ground beef and cook, breaking it apart, until browned (5-7 minutes).
  3. If needed, drain excess fat, then add sliced onions, garlic, and ginger. Sauté for 2-3 minutes until onions soften.
  4. Add chopped cabbage (and any additional vegetables), stir well, and cook for 5-7 minutes until cabbage is tender but still crunchy.
  5. Season with soy sauce, salt, and pepper. Mix well and allow flavors to meld for 1-2 minutes.
  6. Remove from heat and serve immediately.

Notes

This dish can be served on its own or with jasmine rice or quinoa. For a spicy kick, drizzle with sriracha. Use chicken or tofu for a different protein, and add rice vinegar for a tangy flavor. Leftovers last up to 3 days in the fridge.
