Preparation
- Heat the oil in a large pot or Dutch oven over medium heat.
- Add the mustard seeds and fenugreek seeds; let them crackle for a moment.
- Stir in the onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and green chilies. Cook for 1-2 minutes until fragrant.
- Add the beef and brown it on all sides.
- Sprinkle in cumin, coriander, turmeric, and black pepper. Stir for another minute.
- Pour in vinegar and tamarind paste (if using), followed by enough water to cover the beef.
- Add brown sugar and bring the mixture to a boil.
Cooking
- Reduce heat, cover the pot, and let it simmer for 1.5 to 2 hours or until beef is tender and sauce has thickened.
- Near the end of cooking, sprinkle in garam masala and adjust salt as needed.
