  • 1 tablespoon cornstarch Used to thicken the berry mixture.
  • 1 teaspoon vanilla extract Enhances the flavor of the filling.
  • 1 egg (optional, for egg wash) Gives a golden finish to the pastry.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, gently mix the berries with sugar, cornstarch, and vanilla extract. Let it sit for about 10 minutes.
  3. Roll out the thawed puff pastry on a floured surface and cut into squares or rectangles.
  4. Spoon a generous amount of the berry mixture onto the center of each pastry piece.
  5. Brush edges with beaten egg to enhance golden color if desired.
  6. Fold the pastry over and seal the edges by pressing with a fork.
Baking
  1. Place pastries on a lined baking sheet, ensuring space for expansion.
  2. Bake for about 20-25 minutes until puffed and golden brown.
  3. Allow to cool slightly before dusting with powdered sugar, if desired.
