Ingredients
  

For the Salad
  • 12 ounces cheese tortellini You can use whole grain or gluten-free varieties
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper (red, yellow, or green), diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup mozzarella balls (bocconcini or ciliegine)
  • 1/4 cup fresh parsley or basil, chopped
For the Dressing
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar (or balsamic for a sweeter flavor)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Optional: red pepper flakes for a spicy kick

Method
 

Cooking the Tortellini
  1. Start by cooking the tortellini according to the package instructions. Typically, this means boiling water, adding the pasta, and letting it cook for around 3-5 minutes. Drain and rinse the tortellini under cool water to stop the cooking process and set it aside.
Preparing the Vegetables
  1. Chop your veggies: slice the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion. Optionally, squeeze some fresh lemon juice over them for extra brightness.
Making the Dressing
  1. In a medium bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper. If you want some heat, add in red pepper flakes for that delightful kick.
Combining Everything
  1. Combine the cooled tortellini with the chopped veggies, then pour the dressing over the mixture. Toss everything gently to ensure all ingredients are coated in the dressing.
  2. Fold in the mozzarella balls and fresh herbs for a finishing touch.

  1. Serve it right away or let it chill in the fridge for about 30 minutes to allow the flavors to meld.
