Ingredients

Main ingredients
  • 4 cups croissant pieces (about 6-8 croissants, torn into bite-sized pieces)
  • 8 oz cream cheese (cubed; you can use reduced-fat if desired)
  • 1 cup fresh blueberries (you could also use frozen)
  • 6 large eggs
  • 1 cup milk (any kind works!)
  • 1/2 cup sugar (or reduce this for less sweetness)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional for warmth)
  • Cooking spray or butter (for greasing the baking dish)

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and coat a large baking dish with cooking spray or butter.
  2. Layer the torn croissant pieces evenly in the baking dish, then sprinkle the cubed cream cheese and blueberries over the croissants.
  3. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until well combined.
  4. Pour the egg mixture evenly over the croissant and blueberry layers, ensuring all pieces are covered.
  5. Allow the casserole to sit for about 30 minutes to absorb the flavors. For make-ahead, cover with plastic wrap and refrigerate overnight.
Baking
  1. Bake the casserole in the preheated oven for 35-40 minutes until puffed and golden brown.
