Ingredients
  

For the blueberry filling
  • 4 cups fresh blueberries (or frozen, thawed) Use fresh blueberries if available.
  • 3/4 cup granulated sugar Adjust to taste.
  • 1 tablespoon lemon juice Fresh is best.
  • 1 tablespoon cornstarch Used to thicken.
For the crisp topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour Almond flour can be used for gluten-free.
  • 1/2 cup brown sugar Packed.
  • 1/2 cup unsalted butter Melted; coconut oil can be used for dairy-free.
  • 1 teaspoon cinnamon
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the blueberries with sugar, lemon juice, and cornstarch until they are well-coated.
  3. Transfer the blueberry filling into a greased 8x8 inch baking dish and spread it evenly.
Making the topping
  1. In another bowl, combine rolled oats, flour, brown sugar, melted butter, cinnamon, and salt. Mix until crumbly.
  2. Sprinkle the topping over the blueberries evenly.
Baking
  1. Pop it into the oven and let it bake for roughly 30-35 minutes, or until the topping is golden brown and the blueberries are bubbling.
