For the Filling
  • 2 cups 2 cups fresh blueberries (or frozen, thawed) Thaw and drain if using frozen.

  • 2/3 cup 2/3 cup granulated sugar
  • 1 cup 1 cup heavy cream (or half-and-half) Can substitute with Greek yogurt for a lighter version.
  • 1 teaspoon 1 teaspoon vanilla extract Can substitute with almond or coconut extract for variation.
  • 1 tablespoon 1 tablespoon cornstarch Helps thicken the filling.
  • 1/4 teaspoon 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare your pie crust in the pie dish, crimping the edges as desired.
  2. If using a homemade crust, chill it for at least 30 minutes for the best texture.
  3. In a bowl, toss the blueberries with a little sugar and cornstarch, then spread them evenly over the pie crust.
Making the Custard
  1. In another mixing bowl, beat the eggs until frothy and light.
  2. Gradually whisk in the sugar and salt until fully combined.
  3. Pour in the heavy cream and vanilla extract, whisking until smooth.
  4. Pour the custard mixture over the blueberries, ensuring they are all coated.
Baking
  1. Bake the pie in the preheated oven for about 45-50 minutes, or until the filling is set and the crust is golden-brown.
  2. Let the pie cool for at least an hour before slicing to allow flavors to meld.
