Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar added) For a dairy-free option, use almond or oat milk with a splash of lemon juice.
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs For vegan option, use flax eggs instead.
  • 1 teaspoon vanilla extract
Add-ins
  • 1 ½ cups fresh blueberries (or frozen) Toss in flour if using frozen to prevent sinking.
  • Optional Coarse sugar for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt, stirring gently.
  3. In another bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until blended.
  4. Pour the wet ingredients into the dry mixture and gently fold together with a spatula, being careful not to over-mix.
  5. Gently fold in the blueberries until evenly distributed.
  6. Scoop the batter into the prepared muffin tin, filling each cavity about two-thirds full.
  7. Sprinkle coarse sugar on top of each muffin before baking, if desired.
Baking
  1. Bake for 18-20 minutes or until the tops are golden and a toothpick comes out clean.
  2. Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack.
