Method
Preparation of Blueberries
- Place blueberries in a small saucepan with 1 tablespoon of water over medium-low heat.
- Gently mash them with a fork until they break down and release juices, about 5 minutes.
- Remove from heat and stir in 1 teaspoon of honey or maple syrup to enhance sweetness.
- Let the mixture cool.
Yogurt Mixture
- In a mixing bowl, combine Greek yogurt, remaining tablespoon of honey or maple syrup, vanilla extract, and a pinch of salt.
- Stir until smooth and creamy, adjusting sweetness as desired.
Assembling the Bites
- In a silicone mold or ice cube tray, spoon yogurt mixture into each cavity, filling halfway.
- Add a dollop of blueberry sauce on top of the yogurt.
- Use a toothpick to gently swirl the blueberry sauce into the yogurt for a marbled effect.
Freezing
- Pop the molds into the freezer and let them set for at least four hours or until fully frozen.
- Remove the yogurt bites from the molds and enjoy!
