Ingredients
  

For the Vanilla Cupcakes
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 0.5 cups milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
For the Pastry Cream Filling
  • 1 cup whole milk
  • 2 large egg yolks
  • 0.25 cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
For the Chocolate Ganache
  • 4 ounces semisweet chocolate, chopped
  • 0.5 cups heavy cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, combine the softened butter and sugar, beating until light and fluffy.
  3. Gradually add in the eggs, followed by milk and vanilla, mixing well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Slowly blend the dry ingredients into the wet mixture until just combined.
  6. Spoon the batter into the prepared liners and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack.
Making the Pastry Cream
  1. While the cupcakes cool, prepare your pastry cream. In a small saucepan, warm the milk over medium heat until it begins to steam.
  2. In another bowl, whisk the egg yolks with sugar and cornstarch until smooth.
  3. Gradually add the hot milk to this mixture, then return everything to the saucepan.
  4. Cook over medium heat while stirring constantly until thickened.
  5. Remove from heat, stir in the butter and vanilla, then transfer to a bowl to cool.
Filling and Ganache
  1. Once the cupcakes have cooled, use a knife to create a small hole in the center of each, then fill it with the pastry cream.
  2. For the ganache, gently heat the cream in a saucepan until just simmering.
  3. Pour it over the chopped chocolate and let it sit for a few minutes before stirring until smooth.
  4. Let it cool slightly, then drizzle over the filled cupcakes, allowing it to set.
