  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil feel free to substitute with avocado oil or butter
  • 1 cup shredded cheese cheddar or pepper jack add a lovely kick
  • 1 avocado, sliced or smashed for a creamier texture
  • 1/2 cup salsa mild or spicy, depending on your preference
Tortillas
  • 4 large flour or corn tortillas whole grain tortillas make a nice alternative
Optional Toppings
  • Chopped cilantro

Method
 

Preparation
  1. Start by cracking the eggs into a bowl and whisking them together with milk, salt, and pepper.
Cooking the Eggs
  1. Heat a skillet over medium heat and pour in the olive oil. Once the oil is shimmering, add your egg mixture to the pan.
  2. Gently stir with a spatula until the eggs are just set but still soft and creamy, about 3-4 minutes.
Warm the Tortillas
  1. In the same skillet (or in another if you prefer), place a tortilla on the pan for about 30 seconds on each side until they’re hot and pliable.
Assembly
  1. Lay a tortilla flat, sprinkle a generous amount of cheese on the center, followed by the creamy avocado slices, a scoop of the eggs, and a dollop of salsa.
  2. Roll it up tightly, tucking in the sides as you do, to create a beautiful burrito.
Final Crunch
  1. Return the burrito to the skillet seam-side down and let it crisp up for a minute or two for a delightful crunch.
