Ingredients
  

Salad Base
  • 4 cups mixed greens (baby spinach, arugula, or spring mix)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup strawberries, hulled and sliced
  • 1 avocado, sliced Add right before serving for freshness.
  • 1/4 cup red onion, thinly sliced (optional)
Honey-Lemon Vinaigrette
  • 3 tablespoons olive oil
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Method
 

Preparation
  1. Wash and dry the mixed greens thoroughly.
  2. Slice the cherry tomatoes in half and dice the cucumber into bite-sized pieces.
  3. Hulled and slice the strawberries into thin wedges.
  4. Slice the avocado just before serving.
Making the Vinaigrette
  1. In a small bowl or jar, combine the olive oil, honey, lemon juice, salt, and pepper.
  2. Whisk or shake until well mixed.
Assembly
  1. In a large bowl, toss together the mixed greens, cherry tomatoes, cucumber, red onion, and strawberries.
  2. Drizzle the vinaigrette over the salad and toss gently.
  3. Add the avocado slices just before serving and toss lightly.
