Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
Optional Toppings
  • to taste Extra granulated sugar and cinnamon for rolling Optional for a sweet crust

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar for 3-4 minutes until light and fluffy.
  3. Add the eggs and vanilla extract to the mixture, and mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry mixture to the wet ingredients and mix just until incorporated.
  6. Optionally, fold in the extra cinnamon and sugar into the dough.
Baking
  1. Scoop out tablespoon-sized portions of dough and roll them into balls.
  2. If desired, roll each ball in a blend of granulated sugar and cinnamon.
  3. Place the dough balls on a baking sheet lined with parchment paper.
  4. Bake for 10-12 minutes, or until the edges are slightly golden and the centers are still soft.
  5. Allow the cookies to cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes
