Ingredients
  

For the Salad
  • 1 large head romaine lettuce, chopped Wash and dry thoroughly before chopping.
  • 1 cup homemade croutons See notes for crouton preparation.
  • 1/4 cup freshly grated Parmesan cheese Add more for garnish if desired.
  • 1/2 teaspoon freshly cracked black pepper Adjust to taste.
For the Caesar Dressing
  • 1/2 cup mayonnaise Or Greek yogurt for a lighter option.
  • 2 tablespoons Dijon mustard For flavor.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon anchovy paste Omit for vegetarian version.
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
  • 1 clove garlic, minced Adjust based on preference.
  • Salt To taste.

Method
 

Preparation
  1. Wash and dry the romaine lettuce thoroughly; chop it into bite-sized pieces.
  2. For the croutons, toss cubes of day-old bread in olive oil and toast them in the oven until golden.
  3. In a bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, anchovy paste, lemon juice, and minced garlic, adjusting salt and acid to taste.
  4. Once the croutons are out of the oven and cooled, combine the chopped romaine in a mixing bowl, drizzle with dressing, and toss until evenly coated.
  5. Finish with freshly grated Parmesan and cracked black pepper.

Notes
