- Wash and dry the romaine lettuce thoroughly; chop it into bite-sized pieces.
- For the croutons, toss cubes of day-old bread in olive oil and toast them in the oven until golden.
- In a bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, anchovy paste, lemon juice, and minced garlic, adjusting salt and acid to taste.
- Once the croutons are out of the oven and cooled, combine the chopped romaine in a mixing bowl, drizzle with dressing, and toss until evenly coated.
- Finish with freshly grated Parmesan and cracked black pepper.
