  • 1 lb fresh crab meat (lump crab is best)
  • 4 cups seafood stock Can substitute with chicken stock or vegetable broth
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup diced celery
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 tablespoon Cajun seasoning Adjust for spice preference
  • 2 tablespoons olive oil
  • 2 leaves bay leaves Remove before serving
  • to taste Salt and pepper
  • Fresh parsley for garnish

Method
 

Cooking Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onions, bell peppers, and celery to the pot and sauté until soft and fragrant, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced tomatoes with their juices, Cajun seasoning, and bay leaves, and stir well.
  5. Pour in the seafood stock and bring to a gentle boil.
  6. Reduce the heat and let it simmer for about 20 minutes, stirring occasionally.
  7. Gently fold in the fresh crab meat and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste, and remove the bay leaves before serving.
  9. Ladle into bowls and garnish with fresh parsley.

Notes
