Preparation
- Heat a skillet over medium heat and melt the butter.
- Add the chopped onion, bell pepper, and garlic, sauté for about 5 minutes until softened.
- Stir in the crawfish tails and Cajun seasoning, letting it cook for 3-4 minutes.
- Adjust seasoning with salt and pepper, then fold in the shredded cheese and let cool slightly.
Assembly
- Roll out the puff pastry on a floured surface to even thickness and cut into 4x4 inch squares.
- Place a tablespoon of the crawfish filling in the center of each square and fold over to form triangles.
- Press the edges to seal and use a fork to crimp the edges for decoration.
Baking
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Brush the tops of the pastries with the beaten egg and bake for 20-25 minutes until puffed and golden brown.
