Cajun Lasagna

This Cajun lasagna combines rich flavors and textures with zesty Cajun spices, andouille sausage, and luscious cheese, creating a comforting dish that evokes the warmth of New Orleans.

Ingredients
  

Pasta and Sauce
  • 12 pieces lasagna noodles (regular or no-boil)
  • 2 cups marinara sauce
  • 2 teaspoons Cajun seasoning More if you like it spicy
  • Salt & pepper to taste Salt & pepper
Meat and Vegetables
  • 1 lb andouille sausage, casing removed Can substitute with ground turkey, beef, or plant-based sausage.
  • 1 medium onion, chopped
  • 1 bell pepper, chopped bell pepper, chopped (any color)
  • 3 cloves garlic, minced
Cheese Mixture
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese Plus more for topping
  • 1 cup grated Parmesan cheese
Garnish
  • Fresh parsley or green onions For garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the noodles according to package directions if not using no-boil. Drain and set aside.
Cooking the Filling
  1. In a large skillet over medium heat, add the andouille sausage. Cook for about 5-7 minutes, breaking it apart until browned.
  2. Add the onion and bell pepper, cooking until softened (around 4-5 minutes).
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Pour in the marinara sauce and sprinkle in the Cajun seasoning. Stir and let it simmer for 5 minutes.
Prepare Cheese Mixture
  1. In a bowl, mix together the ricotta cheese, half of the mozzarella, and half of the Parmesan. Season with salt and pepper, and stir until combined.
Layering
  1. In a 9x13-inch baking dish, spread a thin layer of the sausage and marinara mixture at the bottom.
  2. Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles and top with a third of the remaining sausage mixture.
  3. Repeat this process: add three more noodles, the rest of the ricotta mixture, and another third of the sausage mixture.
  4. Top with the last three noodles and the remaining marinara sauce. Sprinkle the rest of the mozzarella and Parmesan on top.
Baking
  1. Cover the dish with aluminum foil and bake for about 25 minutes.
  2. Remove the foil and bake for another 15 minutes, until the cheese is bubbly and golden brown.
  3. Let it rest for about 10 minutes before serving.

Notes

Serve with a fresh green salad and cornbread. For a vegan version, use tofu ricotta and plant-based sausage.
