Preparation
- Preheat your oven to 375°F (190°C).
- Cook the noodles according to package directions if not using no-boil. Drain and set aside.
Cooking the Filling
- In a large skillet over medium heat, add the andouille sausage. Cook for about 5-7 minutes, breaking it apart until browned.
- Add the onion and bell pepper, cooking until softened (around 4-5 minutes).
- Stir in the minced garlic and sauté for another minute until fragrant.
- Pour in the marinara sauce and sprinkle in the Cajun seasoning. Stir and let it simmer for 5 minutes.
Prepare Cheese Mixture
- In a bowl, mix together the ricotta cheese, half of the mozzarella, and half of the Parmesan. Season with salt and pepper, and stir until combined.
Layering
- In a 9x13-inch baking dish, spread a thin layer of the sausage and marinara mixture at the bottom.
- Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles and top with a third of the remaining sausage mixture.
- Repeat this process: add three more noodles, the rest of the ricotta mixture, and another third of the sausage mixture.
- Top with the last three noodles and the remaining marinara sauce. Sprinkle the rest of the mozzarella and Parmesan on top.
Baking
- Cover the dish with aluminum foil and bake for about 25 minutes.
- Remove the foil and bake for another 15 minutes, until the cheese is bubbly and golden brown.
- Let it rest for about 10 minutes before serving.

Serve with a fresh green salad and cornbread. For a vegan version, use tofu ricotta and plant-based sausage.
