  • 1 lb smoked sausage (andouille or your choice)
  • 1 cup long-grain rice (white or brown)
  • 1 medium onion, diced
  • 1 medium bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 2 cups chicken broth (or vegetable broth for a veggie option)
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for added heat)
  • 1 tablespoon olive oil, for cooking

  • for garnish fresh parsley, chopped

Method
 

Cooking the Base
  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper, cooking until they soften and become fragrant—about 5 minutes.
  3. Incorporate the minced garlic and sliced sausage. Sauté for another 3-4 minutes, until the sausage browns slightly.
  4. Sprinkle the Cajun seasoning, paprika, and cayenne pepper. Stir everything well for a couple of minutes.
Cooking the Dish
  1. Pour in the diced tomatoes and chicken broth, stirring to combine.
  2. Bring the mixture to a gentle boil, then reduce heat to simmer.
  3. Stir in the rice, cover the skillet, and cook for about 20 minutes until the rice is tender and has absorbed the broth.
  4. Check and adjust the seasoning with salt and pepper as needed.
Serving
  1. Fold in fresh parsley before serving.
  2. Serve directly from the skillet for a cozy family dinner.

Notes
