Preparation
  1. Gather your ingredients and cut the potatoes into even cubes.
  2. In a large bowl, toss the diced potatoes, onion, minced garlic, and olive oil until well coated.
  3. Season the mixture with salt and pepper, and fold in any chosen herbs.
  4. Cut large squares of aluminum foil and place a generous scoop of the potato mixture in the center of each square.
  5. Fold the edges of the foil over the potatoes to create a secure packet.
Cooking
  1. Place the foil packets over medium heat on the grill or campfire for about 25–30 minutes.
  2. Check for tenderness; they are done when the potatoes are easily pierced with a fork.
