Ingredients
  

For the Bruschetta
  • 1 loaf loaf of crusty Italian or French bread Baguette works well too!
  • 2 cups ripe tomatoes Heirloom, Roma, or any fresh variety you love.
  • 1 cup fresh mozzarella Either balls (bocconcini) or cut into small cubes.
  • 1 cup fresh basil leaves Try to use large leaves for a burst of flavor.
  • 2 tablespoons balsamic glaze A little sweetness enhances the dish.
  • 2 tablespoons extra-virgin olive oil For drizzling, plus a bit more for the bread.
  • Salt and black pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the bread into 1-inch thick pieces and place them on a baking sheet.
  3. Brush each piece lightly with olive oil.
Toasting
  1. Toast the bread in the oven for about 5-7 minutes or until golden brown.
Topping
  1. Dice the tomatoes and mozzarella into small cubes and add them to a mixing bowl.
  2. Roll up the basil leaves and slice them thinly (chiffonade). Add to the bowl.
  3. Drizzle in balsamic glaze and olive oil; sprinkle with salt and pepper. Gently toss to combine.
Assembly
  1. Remove the toasted bread from the oven and spoon the tomato-mozzarella mixture onto each slice.
  2. Drizzle a little extra balsamic glaze on top if desired.

Notes
