Carrot Apple Zucchini Bread

Ingredients
  

For the bread
  • 1 cup shredded carrots (about 2 medium carrots)
  • 1 cup shredded zucchini (about 1 medium zucchini)
  • 1 cup grated apple (about 1 large apple; preferably Granny Smith) adds a tart kick
  • 1 cup all-purpose flour (or whole wheat flour) for a nuttier flavor
  • 1/2 cup brown sugar can substitute with coconut sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg optional, adds warmth
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans optional for crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper.
  2. In a large mixing bowl, combine shredded carrots, zucchini, and grated apple.
  3. In another bowl, whisk together the flour, both sugars, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat together the eggs, oil, and vanilla until well combined.
  5. Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
  6. Fold in the shredded veggies and nuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack.

Notes
