Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until well blended.
- In another bowl, mix the sugar and oil until combined. Then add the eggs one at a time, followed by the vanilla extract. Mix until smooth.
- Gradually fold the dry ingredients into the wet mixture. It’s fine to have a few lumps.
- Gently stir in the grated carrots and any optional mix-ins like walnuts or raisins.
Baking
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack.

For a healthier version, substitute some sugar with unsweetened applesauce. For a vegan option, replace eggs with flax eggs and use a vegetable-based oil. This bread freezes well for up to 3 months.
