Preparation
- Preheat your oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Gently add the cauliflower florets and let them cook until tender, about 5-7 minutes.
- Drain the cauliflower and let it cool slightly.
Mixing
- In a big mixing bowl, combine the cream cheese, sour cream, garlic, onion powder, paprika, salt, and black pepper. Mix until well combined.
- Fold in the cauliflower and half of the shredded cheddar cheese until well-coated. Taste and adjust seasonings if needed.
Baking
- Transfer the mixture into a greased casserole dish (about 9x13 inches).
- Sprinkle the remaining cheddar on top and, if using, the breadcrumbs.
- Bake for about 25-30 minutes until the top is golden and bubbly.

Notes
You can substitute cream cheese with a vegan cream cheese for a dairy-free version. Feel free to swap out cheddar for mozzarella or any cheese that melts well. You can assemble the casserole up to a day in advance, cover it, and store it in the fridge. Just bake straight from the fridge, increasing the baking time slightly. Store leftovers in an airtight container in the fridge for up to five days.
