- Once the cauliflower is done, wrap the tortillas in aluminum foil and warm them in the oven for about 5 minutes.
- Assemble the tacos by placing a warm tortilla down, adding roasted cauliflower, then topping with red cabbage, avocado, and cilantro. Finish with a squeeze of lime.
