Ingredients
  

For the roasted cauliflower
  • 1 medium head cauliflower, cut into bite-sized florets You can use pre-cut or frozen cauliflower to save time.
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the tacos
  • 8 pieces corn or flour tortillas (your choice) Whole-wheat tortillas are a nutritious substitute if you prefer.
  • 1 cup red cabbage, thinly sliced For crunch.
  • 1 cup fresh cilantro, chopped For a burst of freshness.
  • 1 piece avocado, sliced For a creamy finish.
  • Lime wedges To brighten everything up.
  • Optional toppings: pico de gallo, salsa, or hot sauce of your choice

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the cauliflower florets with olive oil, cumin, smoked paprika, garlic powder, salt, and black pepper until well coated.
Roasting
  1. Spread the cauliflower onto a baking sheet, ensuring they are not crowded.
  2. Roast for about 25-30 minutes, stirring halfway through, until golden and slightly caramelized.
Assembly
  1. While the cauliflower is roasting, prepare your toppings by slicing the red cabbage and chopping the fresh cilantro.
  2. If desired, mash the avocado with a sprinkle of lime juice.
  3. Once the cauliflower is done, wrap the tortillas in aluminum foil and warm them in the oven for about 5 minutes.
  4. Assemble the tacos by placing a warm tortilla down, adding roasted cauliflower, then topping with red cabbage, avocado, and cilantro. Finish with a squeeze of lime.
